5 Minutes to Chocolate!
My mom sent me this one today.
5 MINUTE CHOCOLATE MUG CAKE
4 tablespoons flour
4 tablespoons sugar
2 tablespoons cocoa
1 egg
3 tablespoons milk
3 tablespoons oil
3 tablespoons chocolate chips (optional)
A small splash of vanilla extract
1 large coffee mug
Add dry ingredients to mug, and mix well. Add the egg and mix thoroughly.
Pour in the milk and oil and mix well.
Add the chocolate chips (if using) and vanilla extract, and mix again.
Put your mug in the microwave and cook for 3 minutes at 1000 watts.
The cake will rise over the top of the mug, but don't be alarmed!
Allow to cool a little, and tip out onto a plate if desired.
EAT! (this can serve 2 if you want to feel slightly more virtuous).
And why is this the most dangerous cake recipe in the world ?
Because now we are all only 5 minutes away from chocolate cake at any time of the day or night!

Mom said the second time she tried it, she added about 1/8 teaspoon of baking soda and mixed it up with a whisk and it was really good.

It is time.....
New Year’s Soup
4 small bags of black eye peas (You can also use fresh ones)
6 cans of Rotel (A can of very spicy stewed or chopped tomato)
4 cans chicken broth
3 large onions - chopped
6 stalks celery and tops - chopped
2 Tbl salt
¼ C garlic - chopped
1 Tbl lemon pepper
Fresh cilantro - chopped
Elgin sausage (Elgin is a town near here that has great sausage. Just use a kielbasa-type of sausage and you can't go wrong)
Carrots - chopped
Put this all together in two large dutch ovens. Cook on the stovetop for about 2 hours.
To make vegetarian, use veggie broth and omit the sausage.

I can't tell you how highly I recommend Melia's soup! Hubby and I have been known to nearly founder on it! Isn't there something about eating black-eyed peas on New Year's Day for good luck??

Thank you for reminding us Melia. Drac is right, it is great. Also IF there is any leftover it freezes for another day !!
I usually make mine around June as our weather is a bit hot at the moment to really appreciate how warming and fulfilling it can be.

How cool is that! A lot of times, I don't even peel my potatoes for mashed ones - especially when I make them with roasted garlic. But sometimes, I do want them peeled and I will definitely try this.

Thank you for those great tips ladies, also Drac, the Simply Recipes site, I shall have some time out and read up their recipes. With Winter approaching I noticed some real warmer uppers.

Wow, that's an easy way to peel potatoes.
This is what someone brought for birthday breakfast, it was too good.
Sausage & Cheddar Cheese Strata
1 1/2 lbs ground breakfast sausage
4 eggs beaten
2 1/2 cups half & half
1 tsp dried sage
3/4 tsp kosher salt
1/4 tsp freshly ground pepper
6 potato bread or other soft white bread slices, crusts removed
2 cups (6oz) grated extra-sharp cheddar cheese
2 Tbsp fresh chives, green onions or parsley chopped
Preheat oven to 350 degrees F, butter a 9x13x2 baking dish.
Brown sausage, drain. Whisk together eggs, half & half, sage, kosher, salt and pepper in a medium bowl.
Line baking dish with bread slices, top with sausage. Pour egg mixture over top and top with cheese.
Bake about 30 minutes, don't over cook. Let cool 15-20 minutes, top with chives just before serving.

Oh, yum! I love those breakfast casseroles.
Oh, yes, Sophie, that site has wonderful recipes. I love the personal stories about them at the beginning. She mentions her dad a lot.
